The new creative à la carte menu presents a number of tempting sensations with an emphasis on seasonal and locally produced ingredients and just that indispensable touch of Parisian chic

Smoked trout, pickled radishes, roasted grapes, foie gras, quince marmalade, pumpkin ravioli, crab bisque, tripe, chickpeas, perch fillet wrapped in vine leaves, roll with lamb confit, black trumpet mushroom ragout, chestnut and rosemary cream, artichoke, artichokes, caramelized apples and candied carrots – these are just some of Ana’s new combinations calling guests to Le Bistro this season

The iconic Le Bistro of the Esplanade Zagreb Hotel, with its high-quality offer and high standard of service, has for decades been attracting both locals and hotel guests to its charming, glazed ambience of Parisian chic. It is the city's culinary innovator, known for its typical bistro dishes, as well as for the legendary baked Esplanade štrukli, while the creative à la carte offer brings new attractive sensations each season, thanks to long-time Chef Ana Grgić. A selection of available fresh ingredients has inspired Ana to create new, trendy and seductive autumn bistro dishes for the autumn–winter season, available to Le Bistro guests from today.

‘In the new menu, special emphasis is placed on currently available fresh autumn ingredients such as grapes, aromatic quinces, indispensable pumpkins, aromatic oranges and chestnuts, followed by autumn mushrooms such as truffles, black trumpets or porcini mushrooms, which put a special signature on this menu. It should be pointed out that we pickle our own ingredients, such as the vine leaf that comes with the perch fillet and capers, while I pickle radishes and combine them with smoked trout and chilli. I use shiitake mushrooms to complement a crispy cake with porcini mushrooms and brie cheese. I believe that lovers of French cuisine will come into their own here, because the menu also brings some tried and tested specialties such as roasted foie gras with crispy brioche, French onion soup, and mille-feuille with chestnut and chocolate cream. I am particularly pleased that all fish and seafood come from the Adriatic Sea and are supplied by our long-time partners who bring us only fresh and highest-quality ingredients. In this menu, I have tried to obtain a balance of flavours and offer a selection of attractive and diverse dishes, and I believe that everyone will find something to their liking,’ said the Esplanade’s Executive Chef Ana Grgić.

Ana paid special attention to selecting and combining ingredients and spices to create interesting combinations that appeal to both the eye and palate. In addition to the above, the autumn menu highlights the roll with lamb confit served with black trumpet mushroom ragout and fava bean cream, followed by Pag cheese mousse with roasted grapes, wine sauce, pepper and fresh thyme, Roman gnocchi with roasted pine nuts served with mushroom ragout, velouté of golden chanterelles, lardo and a poached egg, and then there is also cod brandade, tripe with chickpeas and chilli, smoked Mediterranean scallops with fennel, thick clam chowder with prawns and lime, then delicious Canadian rib-eye steak with a fresh herb marmalade, as well as smoked beef fillet with chestnut and rosemary cream. Desserts from the Esplanade’s patisserie perfectly round off the entire à la carte selection, and particularly noteworthy are the caramelized apples with tonka bean mousse and caramel sauce, the delicious juicy carrot and almond sponge cake served with carrot and orange cream, and the Esplanade’s popular hot chocolate cake, this time paired with vanilla and wild berry cream.

We nurture friendly relationships with our guests and we are especially pleased with the fact that our guests feel safe here,’  said Ivan Trbušić, Le Bistro Restaurant Manager, who has worked at the Esplanade for more than 20 years, adding: ‘We respect all stipulated measures while implementing the highest standard of service. We wear masks, keep a distance while communicating, as well as maintain distance between tables, in the restaurant and on the terrace. Disinfectants and disposable menus are available to the staff and guests, as well as the possibility to download menus and free daily newspapers via QR codes to their smartphones, while additional safety is provided by bringing the cutlery only once a guest is seated.’  

In order to make it easier for guests to make a choice, the menu has specially labelled dishes that should not contain gluten, those suitable for a vegetarian diet, and halal dishes. In addition, Le Bistro is likely the only restaurant in town offering baked štrukli with gluten-free flour for people with an allergy or intolerance to gluten. 

Le Bistro also offers a daily fresh Menu du Jour, which is a daily menu chosen by the chef, at a price of only HRK 160 for a three-course meal with a glass of wine and coffee or tea. The unforgettable gourmet experience is complemented by a list of premium wines and champagne from Croatia and the world, while the charming personnel will carefully advise the guests on wine and food pairings. About Executive Chef Ana Grgić 
This young but already experienced executive chef has been running the Zinfandel's Restaurant, one of the best restaurants in Croatia, as well as the charming French restaurant Le Bistro and Esplanade Catering, for more than eight years. Ana pursues the tradition of the Esplanade Hotel’s cuisine while keeping up with world-class culinary trends. Her creative and imaginative menus have impressed many guests and celebrities in the past years, as well as members of royal families, such as the Swedish king and queen, the Japanese prince and princess, the prince of Saudi Arabia, the royal couple from Denmark and many others who did not remain indifferent to Ana's ingenuity in preparing dishes. Ana has received a number of accolades for her personality, excellence and style of cooking. Prestigious publications have nominated her for Woman of the Year and Person of the Year, and the renowned Guida Gallo guide included her risotto among the 101 best risottos in the world in 2013 and 2016. Anna’s style of preparing dishes and her personality led her to participate in the popular TV cooking programme Celebrity MasterChef as a jury member. In addition, Ana proudly bears the title of ambassador for the Fish Forward Project in Croatia within the WWF (World Wildlife Fund) initiative, setting an example for raising consumer awareness of the global environmental and social consequences of the consumption of fishery products. The Gault&Millau guide awarded Ana the title of Great Chef of Tomorrow, specially emphasising her respect for the seasonality and quality of ingredients, as well as consistent and carefully refined dishes. Her culinary virtuosity and creativity have been recognised by the gourmet association Chaîne des Rôtisseurs, which awarded Ana the prestigious title of Chef Rôtisseur.
